There is something so satisfying about a big bowl filled with seasoned chicken, creamy avocado, and fluffy rice. It is the perfect weeknight meal when you want something that tastes like it came from a restaurant but is much better for you.

My top tip for this recipe is to let the chicken rest for a few minutes before you slice it. This keeps all those wonderful juices inside the meat rather than letting them run onto your cutting board.

  • 1 pound boneless skinless chicken thighs
  • 2 cups cooked white or brown rice
  • 2 ripe avocados
  • 1/4 cup sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup canned black beans, drained

    In a small bowl, whisk together the avocados, sour cream, lime juice, and garlic until smooth and creamy.

    Pat the chicken thighs dry with a paper towel and season them well with the chili powder, salt, and pepper.

    Add the chicken to the pan and cook for about 6 to 8 minutes on each side until the chicken is golden brown and cooked through.

    Remove the chicken from the pan and let it rest for 5 minutes before slicing it into strips.

    Top each bowl with the sliced chicken, a spoonful of black beans, and a generous drizzle of the avocado sauce.

Store any leftover chicken and avocado sauce in separate airtight containers in the fridge for up to two days. If you want a bit of extra crunch, try adding some diced bell peppers or pickled red onions on top.
