I love making these bars because they are so much cheaper and tastier than the ones you buy at the store. You do not need any fancy equipment or an oven to put these together.

My grandkids really enjoy them as an after school snack. Since they come together in just a few minutes, you can easily keep a batch ready in your fridge for whenever you need a boost.

๐Ÿงบ Ingredients

  • 2 cups rolled oats
  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1/2 cup vanilla protein powder
  • 1/4 cup chia seeds
  • 1/3 cup mini chocolate chips
  • 2 tablespoons milk or water if needed

    Line a square baking dish with parchment paper so the bars are easy to remove later.

    In a large mixing bowl, combine the oats, protein powder, and chia seeds.

    Add the peanut butter and honey to the dry ingredients and mix well until everything is combined.

    If the mixture seems too dry or crumbly, add a tablespoon of milk at a time until it holds together when pressed.

    Fold in the mini chocolate chips.

    Press the mixture firmly into your prepared baking dish using the back of a spoon or a piece of wax paper.

    Place the dish in the refrigerator for at least one hour to set before cutting into bars.

    Lift the parchment paper out of the dish and slice into your desired bar size.

Store these bars in an airtight container in the refrigerator for up to two weeks. If you prefer, you can wrap them individually in plastic wrap so you can grab one on your way out the door.
