There is nothing quite like a meal that comes together in one pan. This lemon garlic chicken has become a staple in my kitchen because it uses simple pantry ingredients to create such a bright and comforting flavor.

My favorite trick for this recipe is to make sure you use freshly squeezed lemon juice rather than the bottled kind. It really makes the sauce pop and adds that lovely zing we all look for in a good chicken dinner.

๐Ÿงบ Ingredients

  • 1.5 pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper.

  2. 2

Heat the olive oil in a large skillet over medium high heat.

  3. 3

Add the chicken to the pan and cook for about 5 to 6 minutes on each side until golden brown and cooked through.

  4. 4

Remove the chicken from the pan and set it aside on a plate.

  5. 5

Lower the heat to medium and add the minced garlic to the pan, stirring for about one minute until fragrant.

  6. 6

Pour in the lemon juice and chicken broth, scraping the bottom of the pan to get all those tasty brown bits.

  7. 7

Stir in the oregano and let the sauce simmer for 3 minutes so it reduces slightly.

  8. 8

Return the chicken to the pan and spoon the sauce over the meat before serving with a sprinkle of fresh parsley.

๐Ÿ’ก Tips

Serve this chicken over steamed rice or pasta to soak up all that extra garlic sauce. You can store any leftovers in an airtight container in the fridge for up to three days.
