I love this recipe because it takes all the stress out of a busy evening. You just toss everything onto one tray and let the oven do all the hard work for you while you relax.

My favorite thing about this dish is how flexible it is. You can swap out the vegetables for whatever you have sitting in your fridge drawer, and it will always come out great.

๐Ÿงบ Ingredients

  • 2 pounds chicken thighs, bone in and skin on
  • 1 pound baby potatoes, halved
  • 2 large carrots, peeled and chopped
  • 1 head of broccoli, cut into florets
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 lemon, sliced into rounds

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Place the chicken, potatoes, and carrots on a large sheet pan.

  3. 3

Drizzle the olive oil over the chicken and vegetables, then sprinkle with oregano, garlic powder, salt, and pepper.

  4. 4

Use your hands to toss everything until it is evenly coated, then arrange the chicken and vegetables in a single layer.

  5. 5

Tuck the lemon slices in between the chicken pieces.

  6. 6

Roast in the oven for 25 minutes, then remove the pan to add the broccoli florets.

  7. 7

Return the pan to the oven and roast for another 15 to 20 minutes until the chicken is cooked through and the vegetables are tender.

๐Ÿ’ก Tips

Leftovers keep well in an airtight container in the fridge for up to three days. If you prefer crispier skin on the chicken, you can turn on the broiler for the last two minutes of cooking. Serve this with a side of fresh bread to soak up the juices.
