Stuffed peppers are a classic dinner choice because they are filling and look so pretty on the plate. I love making these when I want something wholesome that does not require standing over a hot stove all evening.

My best tip is to use multi colored peppers if you can find them. It makes the dish look extra bright and inviting for a busy weeknight meal.

  • 1 pound ground beef
  • 1 cup cooked white rice
  • 1 cup tomato sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

๐Ÿ’ก Tips

Leftovers store beautifully in an airtight container in the fridge for up to three days. You can serve these with a side of fresh green beans or a crisp garden salad to round out the meal.
