If you are looking for a dinner that practically cooks itself, this Aloha chicken is going to be your new best friend. It combines tender chicken with the bright sweetness of pineapple and a tangy barbecue sauce, making it a hit for both kids and adults alike.

I love how simple this recipe is for busy weeknights. You can prep it in the morning, let it simmer away, and have a delicious meal ready to serve over rice or in toasted buns the moment you get home.

๐Ÿงบ Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 can (20 ounces) pineapple tidbits, drained with juice reserved
  • 1/2 yellow onion, thinly sliced
  • 3/4 cup barbecue sauce
  • 1/4 cup reserved pineapple juice
  • 1/3 cup brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Lightly spray the inside of your slow cooker with nonstick cooking spray.

  2. 2

Place the chicken breasts into the bottom of the slow cooker.

  3. 3

Add the sliced onion and the drained pineapple tidbits on top of the chicken.

  4. 4

In a medium bowl, whisk together the barbecue sauce, the reserved pineapple juice, brown sugar, soy sauce, garlic powder, and salt.

  5. 5

Pour this sauce mixture over the chicken and pineapple in the slow cooker.

  6. 6

Cover and cook on LOW for 5 hours or HIGH for 3 hours until the chicken is tender.

  7. 7

Use two forks to shred the chicken directly in the pot, stirring well to coat it in the sauce before serving.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the refrigerator for up to 4 days. You can reheat the chicken easily in the microwave or in a pan on the stove. If you prefer a thicker sauce, whisk 2 tablespoons of cornstarch with 1 tablespoon of water and stir it into the slow cooker for the last 15 minutes of cooking.
