There is something so comforting about a big bowl of cheesy potatoes. This recipe is a staple in my house whenever we host a dinner or need a simple side dish that everyone will enjoy. You just toss everything in and let the slow cooker do the heavy lifting for you.

My best tip for this recipe is to use a block of cheddar and grate it yourself. Pre shredded cheese often contains starches that keep it from melting into that smooth, silky sauce we all love. Freshly grated cheese makes all the difference in the world.

  • 30 ounces frozen shredded hash browns, thawed
  • 1 can condensed cream of chicken soup
  • 16 ounces sour cream
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1/2 cup butter, melted
  • 1/2 cup onion, finely diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder

    In a large bowl, stir together the soup, sour cream, melted butter, onion, salt, pepper, and garlic powder.

    Fold in the thawed hash browns and one and a half cups of the shredded cheddar cheese until well combined.

    Pour the mixture into your slow cooker and spread it into an even layer.

    Cover and cook on low for four hours or on high for two hours.
