There is nothing better than coming home to the smell of a hot meal waiting for you. This chicken enchilada casserole is one of my favorite go to recipes because it is incredibly filling and makes dinner time so simple for the whole family.

I love how the tortillas soften up as they cook in the sauce, making everything melt together perfectly. My biggest tip is to use fresh shredded cheese instead of the bagged kind because it melts so much smoother and creamier.

  • 2 large chicken breasts
  • 1 can red enchilada sauce
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 6 to 8 corn tortillas, cut into strips
  • 2 cups shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Sour cream for serving

    Place the chicken breasts into the bottom of your slow cooker.

    Pour the enchilada sauce, black beans, corn, salsa, cumin, and chili powder over the chicken.

    Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender.

    Remove the chicken from the pot and shred it with two forks before returning it to the mixture.

    Stir in the tortilla strips and half of the cheese.

    Top everything with the remaining cheese and cover the pot again for about 15 minutes until the cheese is melted.

    Serve warm with a dollop of sour cream and a sprinkle of fresh cilantro.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can easily reheat individual portions in the microwave. This dish tastes even better the next day after the flavors have had time to settle together.
