There is nothing better than coming home to a house that smells like a delicious dinner is already waiting for you. This honey garlic chicken is a total lifesaver on busy weeknights because you just toss everything in the slow cooker and let it do all the hard work while you take care of your to do list.

My favorite thing about this dish is how tender the chicken gets after cooking low and slow for a few hours. If you want a thicker sauce, just stir in a little cornstarch slurry at the very end to get that perfect glossy finish that coats every single bite.

🧺 Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 4 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Green onions for garnish, optional

👩‍🍳Instructions

  1. 1

Place the chicken thighs into the bottom of your slow cooker.

  2. 2

In a small bowl, whisk together the honey, soy sauce, ketchup, minced garlic, and onion powder.

  3. 3

Pour the sauce mixture over the chicken until it is well coated.

  4. 4

Cover and cook on low for 4 to 5 hours until the chicken is tender and easy to shred.

  5. 5

Remove the chicken from the slow cooker and shred it using two forks.

  6. 6

In a small cup, mix the cornstarch and water together until smooth.

  7. 7

Stir this mixture into the sauce remaining in the slow cooker and let it cook on high for about 10 minutes until it thickens up.

  8. 8

Add the shredded chicken back into the pot, toss to coat with the thickened sauce, and serve warm.

💡 Tips

Serve this chicken over a bed of steamed white rice with some broccoli on the side to round out the meal. If you have leftovers, store them in an airtight container in the fridge for up to three days, as they make a fantastic quick lunch.
