There is nothing quite like a warm bowl of potato soup on a chilly day. This recipe is a favorite in my house because it captures all the best parts of a classic loaded baked potato, from the tender chunks of potato to the savory bacon and cheese toppings. It is hearty enough to be a meal on its own and always hits the spot.

Because you are using a slow cooker, most of the work happens while you are busy doing other things. If you prefer a smoother soup, feel free to use a potato masher to break up some of the larger pieces before adding the final creamy base.

๐Ÿงบ Ingredients

  • 4 cups russet potatoes, peeled and diced into 1 inch pieces
  • 1 cup onion, diced
  • 3 cups chicken broth
  • 4 tablespoons unsalted butter
  • 1/4 cup all purpose flour
  • 1 1/2 cups heavy cream
  • 1/4 cup sour cream
  • Salt and ground black pepper to taste
  • Cooked and crumbled bacon for topping
  • Shredded cheddar cheese for topping
  • Sliced green onions for topping

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Add the diced potatoes, onion, and chicken broth to your slow cooker.

  2. 2

Cover and cook on LOW for 4 to 6 hours or HIGH for 3 to 4 hours until the potatoes are nice and tender.

  3. 3

About 30 minutes before you are ready to eat, melt the butter in a medium saucepan over medium heat.

  4. 4

Whisk the flour into the butter and cook until the mixture is frothy.

  5. 5

Slowly whisk in the heavy cream and sour cream until the mixture is smooth and thick.

  6. 6

Stir this creamy mixture into your slow cooker, cover, and let it cook for another 20 to 30 minutes to thicken up.

  7. 7

Taste the soup and add salt and pepper as needed before serving with plenty of bacon, cheese, and green onions.

๐Ÿ’ก Tips

For the best flavor, store any leftovers in an airtight container in the fridge for up to three days. You can also serve this in hollowed out bread bowls for a fun and filling presentation.
