There is nothing quite like the combination of creamy cheese and juicy fruit on a warm day. This dish is my favorite way to use seasonal peaches because it feels fancy but comes together in just a few minutes.

Make sure to grab the ripest peaches you can find at the market. If you want to save time, you can toast the walnuts a day in advance so you are ready to assemble everything when guests arrive.

  • 2 balls of fresh burrata cheese
  • 2 large ripe peaches, sliced into wedges
  • 1/2 cup walnuts
  • 2 tablespoons sugar
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • A pinch of sea salt

    Place the walnuts and sugar in a small pan over medium heat. Stir constantly for about 3 minutes until the sugar melts and coats the nuts, then set them aside to cool.

    Arrange the fresh peach wedges on a large serving platter.

    Place the burrata balls on top of the peaches and gently break them open with a knife or spoon so the creamy centers spill out.

    Scatter the candied walnuts and torn basil leaves over the cheese and peaches.

    Drizzle the olive oil and balsamic glaze over the entire dish, then finish with a little pinch of sea salt before serving.

๐Ÿ’ก Tips

Serve this with some toasted baguette slices to scoop up the creamy cheese. Keep leftovers in the fridge, but note that the peaches may release juice and the basil will wilt over time.
