There is something so comforting about the smell of cinnamon baking in the oven. These blondies are a favorite in my house because they are quick to make and disappear almost as soon as they hit the cooling rack.

My secret for the best texture is to pull them out of the oven when the center still looks just a tiny bit underdone. They will finish setting up as they cool, which keeps them perfectly soft and chewy every single time.

๐Ÿงบ Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line an 8 by 8 inch square baking pan with parchment paper.

  2. 2

In a large bowl, whisk together the melted butter and brown sugar until smooth.

  3. 3

Add the egg and vanilla extract, mixing until everything is well combined.

  4. 4

Stir in the flour, baking powder, and salt until just combined, then gently fold in the white chocolate chips.

  5. 5

Spread the batter evenly into your prepared pan.

  6. 6

In a small bowl, mix the granulated sugar and cinnamon together and sprinkle it over the top of the batter.

  7. 7

Bake for 20 to 25 minutes or until the edges are golden brown.

  8. 8

Let the blondies cool completely in the pan before cutting them into squares.

๐Ÿ’ก Tips

These stay soft for days if you keep them in an airtight container at room temperature. If you want to serve them warm, pop a square in the microwave for ten seconds and add a small scoop of vanilla ice cream on top.
