This chili is a favorite in my house because it feels like a warm hug in a bowl. The natural sweetness of the potatoes pairs perfectly with the savory black beans, while the melted queso creates a silky texture that everyone loves.

It is incredibly easy to put together on a busy weeknight. If you have extra time, letting it simmer low and slow really lets all those spices soak into the veggies for an even better flavor.

🧺 Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 large sweet potatoes, peeled and cubed
  • 2 cans black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 3 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 8 ounces queso dip, prepared
  • Salt and pepper to taste
  • Fresh cilantro and sliced jalapeños for topping

👩‍🍳Instructions

  1. 1

Heat the olive oil in a large pot over medium heat.

  2. 2

Add the onion and cook until soft, then stir in the garlic and cook for another minute.

  3. 3

Add the cubed sweet potatoes, chili powder, and cumin, stirring to coat the potatoes in the spices.

  4. 4

Pour in the black beans, diced tomatoes, and vegetable broth.

  5. 5

Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 to 25 minutes or until the potatoes are tender.

  6. 6

Stir in the queso dip until it is fully melted and creamy.

  7. 7

Taste and add salt or pepper if needed before serving warm with your favorite toppings.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to four days. You can reheat this gently on the stove with a splash of broth if the sauce thickens too much. This chili also freezes beautifully for a quick future meal.
