These beef bowls are a favorite in my kitchen because they bring all the fun of street food into one easy dish. The combination of spiced ground beef and sweet roasted potatoes is always a hit with my family.

For the best results, make sure to get a nice sear on your beef and corn. A quick squeeze of fresh lime juice right before serving really makes all the bright flavors pop.

๐Ÿงบ Ingredients

  • 1 pound ground beef
  • 2 large sweet potatoes, peeled and cubed
  • 2 cups corn kernels, fresh or frozen
  • 1 tablespoon taco seasoning
  • 1 ripe avocado, sliced
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons olive oil
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Salt and pepper to taste

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Toss the cubed sweet potatoes with olive oil, salt, and pepper on a large baking sheet and roast for 20 to 25 minutes until tender.

  3. 3

While the potatoes roast, heat a large skillet over medium high heat and cook the ground beef until browned.

  4. 4

Stir the taco seasoning into the beef, then add the corn to the skillet and cook for another 5 minutes until the corn is golden.

  5. 5

Divide the roasted sweet potatoes into bowls and top with the beef and corn mixture.

Add sliced avocado, a sprinkle of cotija cheese, and fresh cilantro to each bowl.

  7. 7

Serve warm with a squeeze of fresh lime juice on top.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can also add a dollop of sour cream or Greek yogurt if you like extra creaminess.
