There is something so special about upgrading a basic grilled cheese into a gourmet meal. By using sun dried tomato and Parmesan focaccia, you get so much extra flavor in every single bite.

I love making this for a quick dinner when I want comfort food without spending all night in the kitchen. If your pesto is very oily, just dab it with a paper towel before spreading it on the bread to keep your sandwich from getting too greasy.

  • 2 thick slices of sun dried tomato and Parmesan focaccia
  • 2 tablespoons basil pesto
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded provolone cheese
  • 1/4 cup shredded fontina cheese
  • 1 tablespoon salted butter, softened

    Spread the basil pesto evenly on the inside of both slices of focaccia.

    Layer the mozzarella, provolone, and fontina cheeses onto one slice of the bread.

    Top with the second slice of bread to close the sandwich.

    Butter the outside of the bread on both sides.

    Place a nonstick skillet over medium heat.

    Cook the sandwich for 3 to 4 minutes per side until the bread is golden brown and the cheese is completely melted.

    Remove from the pan and let it sit for a minute before slicing in half to serve.

Serve this with a bowl of tomato soup for the ultimate meal. If you have leftovers, store them in the fridge and reheat in a toaster oven to bring back the crisp crust.
