My top tip for this recipe is to slice the fennel and apples as thinly as you can. If you have a mandoline slicer, it works wonders here, but a sharp knife and a steady hand will do the trick just fine.

  • 2 large crisp apples, thinly sliced
  • 1 large fennel bulb, thinly sliced with fronds reserved
  • 1/2 cup pecans, toasted and chopped
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • Salt and black pepper to taste
