When summer gardens are overflowing with ripe tomatoes, I love finding simple ways to put them to good use. This tomato galette is a favorite in my home because it tastes just like a sunny afternoon. It is rustic, unpretentious, and allows those beautiful heirloom tomatoes to really shine.

The best part about making a galette is that you do not need any fancy equipment. Since it is a free form tart, you just fold the edges of the dough over your filling and bake it right on a sheet pan. It is a wonderful meal for a weekend brunch or a light dinner with a side salad.

  • 1 pastry crust, store bought or homemade
  • 2 medium to large tomatoes, sliced
  • 1/4 teaspoon salt
  • 1/4 red onion, thinly sliced
  • 1/3 cup feta cheese, crumbled
  • 3 sprigs fresh thyme
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon olive oil
  • 1 egg beaten with 1 tablespoon water for egg wash

    Preheat your oven to 400 degrees Fahrenheit.

    Slice your tomatoes and lay them on paper towels. Sprinkle them with a little salt and let them sit for a few minutes to draw out excess liquid, then gently pat them dry.

    Roll your pie dough out into a 10 to 12 inch circle on a lightly floured surface and transfer it to a parchment lined baking sheet.

    Scatter half of the feta, sliced onions, thyme, and basil in the center of the dough, leaving a 2 to 3 inch border around the edges.

    Arrange the tomato slices over the herb and cheese mixture, then top with the remaining feta, onions, and herbs. Drizzle with the olive oil.

    Fold the edges of the pie dough up and over the outer edge of the filling, pleating as you go.

    Brush the edges of the crust with your egg wash.

    Bake for 30 to 40 minutes, or until the crust is a beautiful golden brown.

Be sure to pat your tomato slices dry before assembling to keep the bottom of your crust nice and crisp. If you have leftovers, keep them in an airtight container in the fridge for up to 3 days or freeze them for up to 3 months.
